Ahh is there anything better than ice cream on a hot summer day? Maybe the one thing that could beat it is a MACARON ice cream sandwich on a hot summer day 😉
This is one of my favorite treats and easy to recreate! I also like to tell myself that it is somewhat healthy since it is gluten free and has fresh strawberries 🙂

Ingredients:
1 Macaron Kit Starter Box- https://globalbelly.com/collections/n…
1 carton of strawberry ice cream
2 packages of fresh strawberries (optional)
Directions:
Step 1: Make macarons as instructions on macaron starter box. However, you will want to pipe the macarons larger, so that they are ice cream sandwich size (about 2-3 inches diameter)
Step 2: Scoop out strawberry ice cream into mixing bowl. Cut up fresh strawberry pieces and incorporate into strawberry ice cream
Step 3: Line a deep baking pan (could be a brownie pan or deep cake sheet) with wax paper. Take ice cream and spread into pan. You want to make sure to not spread too thin, so that you have a thick layer of ice cream to go in between the macaron shells! Put pan in freezer to harden
Step 4: Once ice cream is frozen in pan, use a cookie cutter that is roughly the size of the macaron shells (better to have the cookie cutter be smaller than larger) to cut out a circle in the ice cream pan
Step 5: Remove the ice cream circle and place on one macaron shell and sandwich it with the other!
