One of my favorite things about the south has to be the comfort food! There really is nothing better than gathering around for family dinner and diving into the most flaky and buttery biscuit layers! I found a recipe for some biscuits in a Southern Living magazine awhile back and decided to spice them up with some cheddar and chives… and let me tell you, they are out-of-this-world delicious! The perfect side dish to your next meal, and it only takes 5 ingredients!
Ingredients:
1 stick frozen unsalted butter
2 1/2 cups self-rising flour (I prefer White Lily brand)
1 cup chilled buttermilk
About 1 cup shredded cheddar cheese
2 tbsp finely chopped chives
1 tbsp unsalted melted butter to drizzle over biscuit tops (optional)
Some tips before you get started:
- I like to make the biscuits right before they are served so they are fresh and warm. With that said, I like to put the butter in the freezer the night before so it’s all ready to go when I need it
- The great thing about these biscuits is the ALL the layers! Each one more buttery and cheesy than the next, so be careful to gently roll out dough to not crush the beautiful layers you have made
- Make sure to line the baking pan with parchment paper, so biscuits do not brown too quickly
Directions:
Preheat oven to 475F
Grate frozen butter using large hole of box grater. Mix shredded butter and flour in large mixing bowl. Make sure there are no large lumps of butter (they should be about pea size). Chill in freezer for 10 mins
Remove bowl from freezer and add in shredded cheddar cheese (should be about the same pea size as the butter) and the chopped chives. Mix together until incorporated
Make a well in center of flour mixture with spatula. Pour in chilled buttermilk.
Stir together until sticky dough forms (about 15 times). Try to coat the outside with the flour as much as possible in order to easily remove from bowl
Turn out dough to lightly floured surface. Lightly sprinkle flour on top of dough and rolling pin so easy to roll out.
Roll out dough to be about 3/4inch thick rectangle (about 9×5 inches)

Once complete first fold, rotate so that long side is vertical again and roll out. Repeat this folding process 3 more times
After completing final fold, roll out to the same 3/4 inch rectangle and use biscuit cutter or circle cookie cutter to cut out biscuits. It is up to you the size of biscuits you would like, but I usually use about 3.75inch in diameter cutter.
Place biscuits on lined baking sheet slightly touching each other.
Bake for about 15 mins until lightly golden
Melt 1 tbsp butter in microwave safe bowl (optional)
Drizzle butter or lightly brush tops of warm biscuits with the melted butter and enjoy!
I hope that these biscuits become a new family dinner staple like they are with mine!
